Hello everyone,
This is Marcos, founder of Rancho Altos. Today, I want to share the heart and soul of our distillery project with you, a project we are all part of, one that carries the potential to reshape a multi-billion-dollar industry. The dedication, expertise, and sheer hard work that have gone into this endeavor are extraordinary, and it’s important that you understand just how groundbreaking this will be, with some of the world’s biggest players already taking notice.
Three years ago, we recognized a pressing need: to create a distillery that could not only revive the ancestral methods of tequila-making but also become the epitome of efficiency, sustainability, and stunning design. If you aren’t aware, tequila holds a Denomination of Origin protection, which makes it an incredibly attractive market for massive investors. We’ve seen companies like Diageo pour hundreds of millions into this space, yet despite their vast resources, they’ve missed the mark when it comes to sustainability. Their distilleries are so large and complex that making them sustainable is nearly impossible.
So, a group of like-minded tequila makers, myself included, came together with a vision. We set out to build a distillery grounded in three core pillars: sustainability, ancestral processes, and forward-thinking design and architecture. What we’ve created is unlike anything the industry has seen before.
Let me walk you through some of the unique features of our distillery. First, we’re deeply committed to integrating nature into every aspect of our process. We’re capturing rainwater not just within the distillery building, but throughout the entire Rancho Altos. This water will be treated in our state-of-the-art facility, allowing us to repurpose up to 98% of our wastewater. This treated water will be reused across our hotel, restaurant, and farms—this is a first in the tequila industry.
We’ve also made it a priority to use natural, locally-sourced materials to minimize our carbon footprint. Volcanic rock, clay, and reclaimed wood from the surrounding forests are central to our construction. By doing this, we’re creating a carbon-neutral site that embodies the spirit of our land.
Now, let’s dive into the technical process. We’re bringing back the ancient methods of transforming agave into tequila. Unlike the modern industry standard, where stainless steel pressure cookers are used, we’re returning to stone ovens, crafted from the very rock of our land. This choice isn’t just about honoring tradition; it’s about enhancing the terroir, that unique flavor profile shaped by the land itself. Terroir, in fact, is our fourth pillar, and we are deeply committed to it.
After the agave is cooked, we use “tahonas”—massive volcanic stones—to crush the agave and release its juices. This ancestral method is rare in today’s industry, but it’s a cornerstone of our process. The extracted juice then moves into fermentation tanks made of local oak, infusing even more of the land’s character into our tequila.
Once fermented, the liquid is distilled in copper stills, handmade by artisans. The result? A boutique tequila that is not only artisanal but also deeply rooted in the terroir of Rancho Altos. The market is shifting towards super-premium spirits, and our product is poised to meet that demand with something truly unique.
Our distillery will be the first in the tequila industry to be 100% organic and regenerative, while also being designed with sustainability at its core. This isn’t just an aspiration; it’s a reality, brought to life by Esrawe Studio, an award-winning design firm. From the very beginning, we agreed that this project would be a landmark—not just for Mexico, but for the world. We envision our distillery as a must-visit destination, a living museum of tequila that’s just 45 minutes from Guadalajara International Airport, one of Latin America’s most visited cities.
This distillery isn’t just a place to produce tequila; it’s a place where the land, the process, and the community come together in a celebration of tradition and innovation. It’s a space where visitors will not only see but feel the history and future of tequila in one of the most beautiful buildings in Latin America—if not the world.
